The PORTA D’ORO restaurant chain is one of the leading brands in fine Italian cuisine in Egypt. The chain has two main branches:

  • A branch in Dokki

  • And another branch in the Fifth Settlement, New Cairo

PORTA D’ORO is classified as a high-end Italian specialty restaurant. Pro Consult has undertaken all operational and administrative aspects of developing and managing this unique project, through the following tasks:

Establishing the entire financial and supply chain management:
  • Develop the organizational structure for the two departments (Finance and Supply) based on current and future workload.

  • Assign appropriate staff to each department and clearly define the duties of department managers.
Preparing policies and procedures:
  • Drafting a policy and operational procedure manual for each department.

  • Preparing a chart of accounts and creating a fixed asset register for the company.
  • Designing an integrated documentation cycle.
Accounts and Purchasing Management:
  • Proposing, selecting, implementing, and training employees on an appropriate accounting program.

  • Preparing variance reports, monitoring inventory movements, and determining actual and standard costs.
  • Creating material preparation cards and scheduling periodic inventory.
  • Establishing key performance indicators (KPIs) to evaluate performance efficiency.
Supply chain management:
  • Preparing a list of approved suppliers and drafting supply contracts.

  • Developing purchasing strategies and implementing the exclusive supply mechanism.
  • Activating the principle of marketing contributions with major suppliers.
Preparing reference guides for PORTA D’ORO restaurants:
  • Raw Materials Manual: Specifies precise product specifications.

  • Recipe Manual: Includes detailed scratch cards.
  • Menu Line Build: Includes the final presentation of each item.
Evaluation and restructuring:
  • Evaluate the performance of operations management staff and propose alternative or support staff.

  • Restructure operations management and define job roles.
  • Conduct performance evaluations using key performance indicators (KPIs).
  • Prepare quality review reports and deviation correction plans in collaboration with operations management.
